A great friend of mine made this for me a while ago and I randomly thought of it the other day. I said to myself I was going to make it this week! It in fact took me over a 3-4 hour span to finish it, when in reality should’ve only took 20 minutes.. that’s what happens when you have two babies to take care of at the same time.

Anyways here’s how to make one of the yummiest salads there is.
What you’ll need:
- 15.5 oz can of black beans
- 1 can or 9 oz of cooked corn
- 1 medium tomato
- 1/3 red onion
- 1 Scallions
- 1 1/2 lime or lemon
- 1 tbsp Olive oil
- 2 tbsp Cilantro
- 1-2 Avocado
- 1/3 cucumber
- Salt & Pepper
- 1 jalapeño (optional)
You can always make this salad however you want by adding and replacing ingredients, but I’m going to share what I used to make mine.
In a large bowl combine your beans after you’ve strained and rinsed them. Then you can go ahead and add your corn also straining and rinsing them. (Try using a handheld strainer.) Next cut and chop your tomato, onion, scallions (however many you’d like), cilantro (I didn’t add this cause hubby isn’t a fan), cucumber, jalapeño (if you choose to do so), and last but not least lime or lemon. Once chopped, throw them in the bowl and squeeze either your lemon or lime, I used half of one lemon. Pour in your olive oil, sprinkle desired amount of salt and pepper, and then mix.
Chill in the fridge for 30 minutes.
Before serving cut and stir in your avocado. I added the one but then added an extra I had.
Eat as a side dish with Tostitos scoops at the next MNF night, or at Sunday night’s family dinner. It’s simple and easy to make, and will surely impress your friends and family.
